Enjoy the creamy goodness of this vegan Italian Parmesan dip that doesnt need any oil. Its great for a party or as a snack. It has a lot of flavor because it has cashews, nutritional yeast, and herbs that smell good.
Ingredients:
- 1 cup raw cashews
- 2 tablespoons nutritional yeast
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup water
Instructions:
Soak the raw cashews in water for at least 2 hours, or overnight for best results
After soaking, drain and rinse the cashews
In a food processor or blender, combine the soaked cashews, nutritional yeast, lemon juice, minced garlic, dried oregano, dried basil, onion powder, salt, black pepper, and water
Blend until smooth and creamy, scraping down the sides as needed
Taste and adjust seasoning if needed
Transfer the dip to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld together
Serve with your favorite vegetables, crackers, or breadsticks
