Spicy Egg & Avocado Breakfast


San Ramon Cheaters

A delicious and nutritious breakfast featuring spicy black beans, creamy avocado, and perfectly cooked eggs.

Ingredients:

  • 2 eggs
  • 1/2 cup canned black beans, drained and rinsed
  • 1/4 cup diced red onion
  • 1/4 cup diced tomatoes
  • 1/4 cup diced avocado
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish
  • Salsa for serving optional

Instructions:

In a small pan, heat olive oil over medium heat

Add diced red onion and saut until translucent

Add cumin powder and chili powder, stir for 1 minute

Add drained black beans and diced tomatoes to the pan

Cook for 3-4 minutes, stirring occasionally

Season with salt and pepper to taste

In a separate pan, cook two eggs to your liking fried, scrambled, or poached

Place the spicy black bean mixture on a plate, top with cooked eggs, and garnish with diced avocado and fresh cilantro

Serve with salsa on the side if desired
