Ingredients:
- 2 cups broccoli florets
- 1 cup roasted cashews
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger paste
- 1/2 teaspoon red pepper flakes adjust to taste
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions:
Combine the soy sauce, hoisin sauce, sesame oil, ginger paste, and red pepper flakes in a small bowl
Put aside
In a large skillet or wok, heat the vegetable oil over medium-high heat
Add the onion slices and minced garlic
Add the onions and stir-fry for 2 to 3 minutes, or until translucent
Stir-fry the broccoli florets for an additional three to four minutes, or until they begin to soften
Add the sliced red and yellow bell peppers and cook for an additional two to three minutes
Cover the cashews and veggies with the sauce mixture
To evenly coat everything, give it a good stir
Allow the sauce to thicken and coat the stir-fried ingredients by cooking for a further two to three minutes
To taste, add salt and pepper for seasoning
Take off the heat and serve hot with cooked noodles or rice
If preferred, garnish with additional cashews
