Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup baby carrots
- 2 cups baby potatoes, halved
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions:
In a slow cooker, place the chicken breasts at the bottom
Add baby carrots, halved baby potatoes, sliced onion, and minced garlic on top of the chicken
Pour chicken broth and olive oil over the vegetables and chicken
Sprinkle dried thyme, dried rosemary, salt, and pepper over the ingredients
Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is cooked through and vegetables are tender
Once cooked, shred the chicken using two forks and mix well with the vegetables and juices
