Ingredients:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1 can 14 ounces diced tomatoes
- 4 large eggs
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions:
Heat the olive oil in a large skillet over medium heat
Add the chopped onion and cook for 2-3 minutes until it starts to soften
Add the diced red bell pepper and cook for another 2-3 minutes until it becomes tender
Stir in the minced garlic, smoked paprika, and cayenne pepper
Cook for an additional minute until fragrant
Pour in the diced tomatoes and simmer for 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly
Make four small wells in the tomato mixture and carefully crack an egg into each well
Cover the skillet with a lid and let the eggs cook for about 5-7 minutes, or until the egg whites are set but the yolks are still slightly runny
Season the eggs with salt and pepper to taste
Garnish with fresh parsley before serving
Serve the Flamenco eggs hot directly from the skillet
