Oatmeal Flax Blueberry Muffins

These Oatmeal Flax Blueberry Muffins are a healthy and delicious breakfast or snack option. Packed with oats, flaxseed, and juicy blueberries, they are a nutritious choice to start your day.

Ingredients:

  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1/4 cup ground flaxseed
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup plain Greek yogurt
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Instructions:

Preheat your oven to 350F 175C and line a muffin tin with paper liners

In a bowl, combine the rolled oats, whole wheat flour, ground flaxseed, brown sugar, baking powder, baking soda, and salt

In another bowl, whisk together the Greek yogurt, milk, vegetable oil, egg, and vanilla extract

Pour the wet ingredients into the dry ingredients and stir until just combined

Gently fold in the fresh blueberries

Divide the batter evenly among the muffin cups, filling each about 2/3 full

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean

Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring to a wire rack to cool completely
